Stuffed Mushrooms with Roast Vegetables and Smoked Cheese

Preparation and cook time: 30 minutes to 1 hour

Serves: 4

Ingredients

6 large open mushrooms
375g roasted vegetables such as parsnips, potatoes, butternut squash, onions. Any vegetables cooked by other methods are also suitable. Cut into bite size pieces.
125g smoked Bavarian cheese, grated
salt and freshly ground black pepper
15ml spoon freshly chopped flat leaf parsley

 
Method:
1. Preheat the oven to 190°C, 375°F, Gas Mark 5. Place the mushrooms on a lightly greased baking tray and top with the cooked vegetables. Sprinkle over the cheese and seasoning and bake in the preheated oven for 20-25 minutes until the cheese is golden. Serve sprinkled with the chopped parsley. This dish is ideal to use up left over vegetables. Other favourite cheeses can also be substituted for the Bavarian smoked cheese.
