Recipe of the Month - August 2004
 
Cheese and Tomato Salad

Preparation time: Up to 30 minutes

Serves: 3 - suitable for vegetarians

Ingredients

75g Low Fat Cheddar Cheese, cubed
1 celery stick, chopped
2 tomatoes, chopped
5 cm piece cucumber, chopped
2 spring onions, chopped

Dressing:

50g or 1 small tub of natural low fat fromage frais
3 teaspoons olive oil
1 teaspoon cider vinegar
½ a teaspoon of tomato puree
salt and freshly ground black pepper to taste

 
Method:
1. Mix all the dressing ingredients together in a bowl
2. Add the salad ingredients and mix well until coated in the dressing. Pack in individual plastic containers
