Recipe of the Month - July 2004
 
Citrus and Herb Marinated Meat Kebabs

Preparation and Cook time: 30 minutes to 1 hour Serves 4

Ingredients

300ml orange juice
2 cloves of garlic
crushed 4 X 15ml spoons
dark soy sauce 2 X 15ml spoons
olive oil
salt and freshly ground black pepper
20g of barbeque herbs, chopped roughly
1kg skinless chicken breast or pork, cut into large chunks (diced)
1 orange
sliced 1 lemon
sliced 2 limes
sliced 8 wooden barbeque skewers, soaked in cold water

 
Method:
1. Place orange juice, garlic, soy sauce, oil, chopped herbs, and seasoning in a bowl. Add the diced chicken or pork, stir and leave to marinate in the fridge, covered for a minimum of 1 hour.
2. Preheat grill to a moderate heat.
3. Skewer the pieces of chicken or pork onto the soaked wooden skewers, with the slices of orange, lemon, and lime between each piece of meat.
4. Place under the grill for 20 - 25 minutes, turning occasionally.
5. Serve with boiled rice or a salad
