| Citrus and Herb
Marinated Meat Kebabs |

Preparation and Cook time: 30
minutes to 1 hour Serves 4
Ingredients
300ml orange juice 2 cloves of
garlic crushed 4 X 15ml spoons dark soy sauce 2 X 15ml spoons olive
oil salt and freshly ground black pepper 20g of barbeque herbs, chopped
roughly 1kg skinless chicken breast or pork, cut into large chunks (diced)
1 orange sliced 1 lemon sliced 2 limes sliced 8 wooden barbeque
skewers, soaked in cold water |

| Method: |

Place orange juice, garlic, soy sauce,
oil, chopped herbs, and seasoning in a bowl. Add the diced chicken or pork,
stir and leave to marinate in the fridge, covered for a minimum of 1 hour. |

Preheat grill to a moderate heat. |

Skewer the pieces of chicken or pork onto
the soaked wooden skewers, with the slices of orange, lemon, and lime between
each piece of meat. |

Place under the grill for 20 - 25
minutes, turning occasionally. |

Serve with boiled rice or a salad |
