Preheat the oven to 1800 or
gas mark 4. |

ITrim the leaves and the end off the
broccoli and chop into bite sized pieces. |

Bring about 2mm of water in the bottom of
a saucepan to the boil, and add the broccoli and a pinch of salt. |

Cover it and cook for 4 minutes on a
moderate heat. |

Drain thoroughly, then put broccoli in a
greased, ovenproof casserole dish. |

Meanwhile, melt the butter in a saucepan
over a moderate heat and add the onions. |

Cook them until soft, (about 5 minutes).

Blend in to this the flour, salt and
pepper until it makes a smooth paste. |

Gradually mix in the milk and cook over a
moderate heat until the mixture thickens, (about 5 minutes). |

Add the chicken, then pour the whole
mixture over the broccoli in the casserole dish. |

Sprinkle the cheese on the top, and bake
in the oven for 15 minutes. |
