Recipe of the Month - May 2004
 
Chicken and Broccoli Bake

Ingredients:(Serves 2)

1 ¼ lb broccoli
4oz-grated cheese
1 ¾ oz butter or margarine
8 oz chicken strips
1 onion peeled and finely chopped
475ml milk
2 tablespoons plain flour
Pinch of black pepper
½ teaspoon salt

 
Method:
1. Preheat the oven to 1800 or gas mark 4.
2. ITrim the leaves and the end off the broccoli and chop into bite sized pieces.
3. Bring about 2mm of water in the bottom of a saucepan to the boil, and add the broccoli and a pinch of salt.
4. Cover it and cook for 4 minutes on a moderate heat.
5. Drain thoroughly, then put broccoli in a greased, ovenproof casserole dish.
6. Meanwhile, melt the butter in a saucepan over a moderate heat and add the onions.
7. Cook them until soft, (about 5 minutes).
8. Blend in to this the flour, salt and pepper until it makes a smooth paste.
9. Gradually mix in the milk and cook over a moderate heat until the mixture thickens, (about 5 minutes).
10. Add the chicken, then pour the whole mixture over the broccoli in the casserole dish.
11. Sprinkle the cheese on the top, and bake in the oven for 15 minutes.
 
Serve with boiled potatoes or a salad.
