Recipe of the Month - April 2004
 
Low-Sugar-Chocolate Chip Cookies

This month’s recipe is suitable for diabetics and should help if you have a sweet tooth.

Ingredients:

½ cup butter or margarine, softened
¼ cup granulated sugar, and enough sugar substitute to equal ½ a cup of granulated sugar
1 teaspoon vanilla extract
1 cup all-purpose flour
3 tablespoons cocoa powder
½ teaspoon baking soda
Pinch of salt
2 tablespoons skimmed milk
1/3 cup chocolate chips

 
Method:
1. Heat oven to 375·F/190C.
2. In medium bowl, beat butter, sugar and sugar substitute until well blended.
3. Add egg and vanilla; beat well.
4. Stir together flour, cocoa, baking soda and salt; add alternately with milk to butter mixture, beating until well blended.
.5. Stir in small chocolate chips.
.6. Drop by teaspoonfuls onto ungreased cookie sheet.
.7. Bake for 7 to 9 minutes or just until set. Remove from cookie sheet to wire rack and allow to cool completely.
Per 1 cookie: 50 calories, 1 g protein, 3 g fat, 5 g carbohydrate, 5 mg cholesterol, 50 mg sodium
