Recipe of the Month - February 2005
 
Chilli Con Carne

Preparation and cook time: Up to 30 minutes

Serves: 4

Ingredients

500g lean minced beef
1 large onion chopped
1 clove garlic crushed
2 tsp chilli powder
1 tsp ground cumin
400g can chopped tomatoes (with chillies and peppers)
300ml beef or vegetable stock
1 red pepper deseeded and diced
400g can red kidney beans
200g can sweetcorn
serve on bed of rice

 
Method:
1. Cook the mince in a large pan until it browns. Add the onion and garlic, stirring for a few minutes, then add the chilli powder and cumin and stir over a low heat for another minute.
2. Add chopped tomatoes and stock. Stir together and bring to a simmer. Cover and simmer gently for 15 minutes.
3. Add the red pepper and simmer for another 10 minutes, then add the kidney beans and sweetcorn. Season and cook for 5 minutes. Serve with rice.
